Step 1: Heat a pan with oil to 180 degrees. Roughly chop the chicken thighs and drain slightly.
Step 2: Crumble the cornflakes, beat the egg whites and mix with the Balinese spice paste. Toss the chicken through the flour, egg white and finally through the cornflakes. Fry the chicken thighs in about 3-5 minutes until golden brown and done. Drain on kitchen paper and serve with finely chopped spring onion.
