Foil baked codfish in Paniki

To all the fish-lovers and barbecue fanatics: this in foil baked codfish with rice, Paniki curry has to be on the shopping list for the next grill session. So: heat the coals, get your aluminum foil and start inviting people as soon as possible!

Shopping list

For 2 people:

  • Samasaya Paniki spice paste : 1 sachet
  • Codfish : 200 g ( 2 filets a 100 g)
  • Coconut milk : 150-200 ml
  • Lime : 1
  • Fresh cilantro : 15 g
  • Pandan rice : 150 g
  • Fried onions

Grab a drink and relax, we are going to cook a delicious Indonesian cuisine!

Step 1: Preheat the oven to 180 degrees. Mix the spice paste with the coconut milk and the juice of half a lime.


Step 2: Fold two “trays” of aluminum foil / baking paper and place the cod fillets in them. Divide the coconut milk mixture over the two packets. Fold well so that nothing can run out.


Step 3: Place the packages in the oven for 20 minutes or until the cod fillets are cooked.


Step 4: Cook the rice according to the preparation method on the package.


Step 5: Remove the fish packages from the oven. Garnish with a lime wedge, fried onions and fresh coriander. Serve with the rice.
