Done with those cheese sandwiches? We got you! The flavors of this delicious Indonesian rendang sandwich will give everyone a spontaneous smile on his (or her) face. Let the rendang simmer while you are working from home and after an hour lunch can start! It is also easy to make with the leftover rendang from the night before.
Quick atjar (sweet and sour)
Grab a drink and relax, we are going to cook a delicious Indonesian sandwich!
Step 1: Fry the spice paste in 2 tbsp of oil. Add 400 ml coconut milk and let it simmer for 5 minutes so that the flavors mix well.
Step 2: Rinse the jackfruit pieces and drain in a colander. Add it to the pan with the soy sauce and let simmer for about 1 hour over low heat. Toss regularly.
Step 3: Cut the cucumbers into slices and the mango into pieces. Squeeze the juice from half of the lime and cut the other half into wedges. In a bowl, mix the rice vinegar with 1 tsp lime juice and sugar. Add the cucumber and mango to the bowl and let it soak. Toss every now and then.
Step 4: Cut the baguette open and into four parts. Top with a few spoons of rendang and garnish with the quick atjar.
