Samasaya presents: crispy and spicy paniki corn fritters! Ready to eat within 15 minutes and perfect as a side dish or as a quick snack.
Grab a drink and relax, we are going to cook a delicious Indonesian side dish!
Step 1: Rinse the corn kernels with cold water. Finely chop the celery and red onion. Add the corn, celery and red onion to a pan with 1 tbsp of oil. Bake for 3 minutes while stirring.
Step 2: Turn off the heat. Let cool briefly and add the eggs to the corn mixture. Stir in 2 tbsp paniki spice paste and the flour until a sticky mass forms. If the mixture remains too thin, more flour can be added.
Step 3: Heat a 1-2 centimeter layer of oil in a pan. You know that the oil is at the right temperature when the oil starts to bubble when you put it in a corn kernel. Spoon a tablespoon of the corn mixture into the pan and press flat. Turn after 1-2 minutes. When the corn biscuit is golden brown on both sides, let them drain on a piece of kitchen paper.
Tip: serve with a fresh dip! Mix some (Greek) yoghurt with hot chili sauce or sambal to taste.
