Step 1: Cook the rice following the preparation method on the package
Step 2: Cut the chicken into cubes and the bok choy coarsely. Heat the oil in a wok and fry the spice paste.
Step 3: Add the sliced chicken and fry briefly. Add the coconut milk and let it cook for 5 minutes.
Step 4: Add the broad beans and cook for 3 minutes.
Step 5: Add the bok choy to the sauce. Stir well and remove the pan from the heat, this way the bok choy stays nice and crispy. Serve the curry with the rice and add sambal to taste if desired.
