Rendang Curry with pumpkin and green beans

With the addition of pumpkin, you get a delicious spicy but sweet curry.

Shopping list:

 

  • Oil : 1el
  • Beef stew : 500g
  • Coconut milk : 400ml
  • Pandan rice:  300g
  • Green beans, broken : 200g
  • Pumpkin, diced : 200g
  • Grated coconut, roasted : 50g

 

Optional: coriander / lime

Preparation:

Take a drink and relax, we are going to cook a delicious Indonesian cuisine.

Step 1: Fry the Rendang spice paste in 1 tbsp oil.

Step 2: Add the coconut milk and let it cook for 5 minutes so that the flavors mix well together.

Step 3: Add the meat and simmer over low heat in about 1 hour.

Step 4: Stir the meat regularly.

Step 5: Meanwhile, cook the rice according to the preparation method on the package.

Step 6: Add the pumpkin and green beans in the last 15 minutes and cook, add the grated coconut at the end of the cooking time and stir well.

Serve the curry with white rice. Garnish with coriander and a slice of lime. Selamat Makan! (Enjoy your meal!)
