You can also serve te Rendang meatballs separately as a late night snack or with a drink!
Grab a drink and relax, we are going to cook a delicious Indonesian meal!
Step 1: Finely chop the onion, garlic and half of the coriander. Mix this together with 30 g spice paste, the shredded coconut and the salt into the ground beef. Form balls the size of a walnut. Cover the meatballs and let them rest in the fridge for 10 minutes.
Step 2: Meanwhile, cook the rice according to the directions on the package.
Step 3: Remove the stems from the string beans and cut them into 2 cm oblique pieces. Remove the seeds from the bell pepper and cut them into thin strips.
Step 4: Heat 2 tbsp of oil in a frying pan and let the balls bake brown from the outside (flip them once). Remove them from the pan (they do not have to be cooked). Heat 1 tbsp oil in a frying pan and fry the remaining spice paste for about 2 minutes. Add the coconut milk and let it simmer for 5 minutes. At last, add the meatballs and let it simmer for 10 minutes, covered.
Step 5: After 10 minutes, add the string beans and bell pepper and let it simmer for another 10 minutes.
Step 6: Serve with rice and Samasaya krupuk. Garnish with the remaining finely chopped cilantro. If you desire a more intens flavor, add chopped red pepper.
